Cider & Perry Vinegar

The fermented juices turn from cider and perry to vinegar through a natural process. The vinegar is then matured in oak casks for at least 3 months before bottling. The vinegar is neither pasteurised nor filtered so some sedimentation, from formation of a vinegar mother, is likely.
